Chicken Pasta

– ½ tsp of salt
– ½ tsp of savoury
– ½ tsp of white pepper
– ½ tsp of black pepper
– 1 tsp of dry mustard
– 1 tsp of oregano
– 1 tsp of paprika
– 1½ tsp of basil
– 1½ tsp of thyme

Organic Alegria pasta of your choice

– 4 tbsp of butter
– 2 lbs of boneless, skinless chicken, cut in cubes
– 1/4 cup of olive oil
– 1 cup of celery, diced
– ½ cup of green onions, chopped
– 8 oz of mushrooms, sliced
– 1 medium sized red pepper, cut into strips
– 2 cups of chicken broth
– 3/4 cups of 15% country cream
– 1/4 cup of flour, sifted
– 4 tbsp of sherry or Xeres vinegar
– 3 tbsp of parsley, chopped
– 1/4 cup of Parmesan cheese, grated
– 1 cup of emmental cheese, grated

Mix all the seasonings in a small bowl. Melt the butter in a frying pan; add the chicken cubes and 1/3 of the seasonings. Once the chicken is cooked take it out and reserve. In the same frying pan, add the oil, 1/3 of the seasonings and cook the vegetables (celery, onions, mushrooms and pepper) for a few minutes. Pour in the chicken broth and let simmer for 2 minutes. Add the remaining seasonings. Pour in the cream and add the sifted flour. Incorporate the Sherry, parsley and parmesan. Leave the sauce to thicken and finally add the chicken and the emmental cheese. Serve on Alegria pasta of your choice.
