Feta cheese and a plateful of veggies, a real treat!

Preparation time: 30 min
1 onion, chopped
1 garlic clove, finely minced
1 yellow, red or orange pepper, chopped
1 pint of mushrooms, washed and sliced
1 pack of spinach, washed and chopped
1 pint of cherry tomatoes or grape tomatoes, cut in halves
1 block of feta cheese (200 g), cut in cubes
2 tbsp of olive oil
1 tsp of salted herbs
Pepper to taste
Your choice of Alegria pasta
In a large frying pan, stir-fry the onions in oil for 2 minutes, add the other vegetables, pepper and salted herbs. Cook at medium heat until the vegetables are ‘al dente’. Add the feta, stir and leave to cook 2 more minutes until the cheese has softened. Adjust seasoning. Serve immediately on your favorite pasta.
