Nothing better than a soup to warm itself by a cold weather!
Servings: 6
Preparation time: 20 min
– 1 onion, chopped
– 1 carrot, chopped
– 1 celery stick, chopped
– 1 tbsp of olive oil
– 8 cups of homemade chicken broth
– Salt and pepper to taste
– Savoury or other herbs to taste
– 200 g of spelt noodles
Cook the vegetables in olive oil for a few minutes until they are tender. Add the chicken broth and let simmer 5 minutes allowing the vegetables to finish cooking. Add the salt, pepper and herbs. Cook for a few more minutes and rectify seasoning if necessary. Finally, add the spelt noodles and cook 3 minutes. Serve with crusty bread and local cheese.
